artificial cream:
These samples were taken from Bakeries and found to be satisfactory.
It had been noticed that a confectioner was in the habit
of selling day-old eclairs cheaply, and a sample revealed that
the number of organisms present exceeded 10 million per gramme.
Further samples were taken to determine the initial number of
organisms in fresh eclairs, and also to ascertain more accurately
the effect of 24 hours storage. The results showed a very rapid
deterioration and the confectioner agreed to discontinue selling
stale eclairs.
ice-cream:
The majority of the samples were from the two principal manufacturers
and although the early samples were unsatisfactory,
improved methods of cleaning and sterilisation of equipment,
constant supervision and regular sampling, raised the standard to
Grade I. The manufacturers were co-operative and the more recent
samples indicated that asatisfactory standard is being maintained.
MINCED BEEF:
Samples were taken from all the various butchers and many
showed very heavy counts of Bacteria In addition to individual
action a circular letter was sent to all butchers drawing attention
to the need for a high standard of cleanliness, and the
desirability of sterilising mincing machines, scales, knives,
trays, counters, etc.
quality of food and its description:
Routine sampling of foods and of drugs has continued. Some
reports of adulteration or of misleading description on the labels
have been received and necessary action taken. Formal sampling
has only been undertaken when an informal sample has been reported
unsatisfactory.
