In addition there are some 180 street market stalls dealing in
various foodstuffs.
N.B Some premises are enumerated in more than one category.
These business concerns have been inspected periodically both
formally and informally. The total number of visits paid during
1961 was 3,827 to premises and 2,989 to stalls.
FOOD HYGIENE:
Work in connection with food hygiene continues to exercise the
attention of the inspectors. The increase in the establishment
has enabled more attention to be paid to this important item.
Numerous inspections of restaurants and cafes have been made,
some being visited on several occasions, where the conditions
warranted such action.
Towards the end of the year a series of lecture/demonstration/
discussion groups was arranged, for selected groups of food
handlers. These were held either at the Health Centre, or at the
premises concerned, where the number of employees justified this.
The question of attaining the complete co-operation of food
handlers in this matter is still requiring earnest thought; the
process is slow but it is believed that definite progress can be
reported. Problems met with include the difficulty of impressing
the employees of the need for personal cleanliness at all times,
together with the need to refrain from smoking.
Some tests were made during the year of the temperatures at
which the various foodstuffs for immediate consumption were kept
in canteens and restaurants. Generally these were found to comply
with the requirements of the Pood Hygiene (General) Regulations
1960.
BACTERIOLOGY OF FOOD:
The improvement in the staffing situation enabled more attention
to be given to this branch of the work, priority being given
to Ice-Cream from manufacturers within the Borough, and Minced
Beef from retail butchers. The samples taken in 1961 were:-
