Report on the sanitary condition of the Metropolitan Borough of Hackney for the year 1920

Slaughterhouses and Meat Inspection.—284 visits were made
to these during the usual slaughtering times when I examined the
carcases and organs of 168 oxen, 14 cows and bulls, 63 calves,
1,102 sheep and lambs, 45 pigs and 12 goats.
The allocation of live cattle to butchers holding " live " permits
ceased at the end of June, and the butchers after that date were
free to buy what they pleased ; consequently the class of animal
now being slaughtered is much better than during the period when
they had to take whatever was allotted to them, and now no old
cows, bulls or ewes are being slaughtered, as the whole of the
butchers who have slaughterhouses only buy prime animals for
their own trade and no carcasing is done for market.
The following I found diseased and had removed and
destroyed:—
Carcases and all the organs of 3 cows affected with
tuberculosis.
Fore quarters head, pluck and liver of an ox affected with
tuberculosis.
Head and tongue of an ox affected with tuberculosis.
Carcase and all the organs of a sow in a dying condition when
bled.
Carcase and all the organs of a calf in a dying condition when
bled.
Portions of the hind quarters of a cow for extreme bruising.
Livers of 2 cows and 5 oxen affected with abcess.
Liver of 1 cow and 8 oxen affected with distomatosis.
Livers of 28 sheep affected with distomatosis.
Livers and lungs of 10 sheep affccted with abcess.
Livers and lungs of 8 sheep affected with parasitic cysts.
