DISPOSAL OF CONDEMNED MEAT.
The 961 tons 19 cwts. 1 qr. of condemned
meat was disposed of to the same firm that has
held the contract for many years. The amount
received for it was £2,525 3s. as compared with
£2,735 7s. 3d. in 1899, £2,059 2s. 5d. in
1898, £2,392 3s. 6d. in 1897, £2,352 4s. 4d.
in 1896, and £1,572 7s. 6d. in 1895, against
which must be placed the expenses incurred by
the Corporation in the execution of their
responsibility, to wit: Salaries of Inspectors ;
chemicals for disinfecting baths ; cost of horses,
vans and haulage ; rentals of condemned meat
sheds ; repairs ; a daily outlay—frequently heavy
—for porterage to convey the condemned stock
from the shops of the salesmen to the sheds for
disinfection before removal to the factory of the
contractor at West Ham, and incidentals, &c.
FISH SUPPLIES.
187,684 tons of fish, of which 149,615 were
land-borne and 38,069 water-borne, were received
at or near Billingsgate Market during the year.
