The average fat content of the 77 samples of Cream amounted
to 52.0% ; that in the two samples of Tinned Cream being 21.7%
The average moisture content in the 237 samples of Butter
returned as genuine, amounted to 14.1%, that in the 29 samples
of Margarine being 18.6%.
The average composition of the samples of Milk submitted
and returned as genuine during each month of the year is given
below:—
