Bakehouses.—These have been dealt with in Part IV. of this report in
connection with the administration of the Factories and Workshops Act, on
which he is required to report specifically to the Secretary of State. Vide
p. 200.
Kitchen and Restaurants.—Eating Houses.—These have also been
dealt with in part IV. of this report.
Places where Ice Creams are made.—There are 230 places where ice
creams are made in this borough, and they have been visited at intervals.
Taken as a whole they must be considered in a fairly satisfactory state. They
are kept under the supervision of the District Sanitary Inspectors, who find
the persons (nearly all Italians) who make them fairly amenable to reason,
although at times, owing to linguistic difficulties, it is not easy to make them
understand what is wanted. The requirements have, however, been translated
into Italian and have been supplied to the Public Health Department by the
L.C.C., and these are given them to read and to keep.
ADULTERATION OF FOOD AND DRUGS.
Samples Analysed.—During the year 1,213 samples were examined, or
which the Public Analyst reported 1,131 as genuine, and 82 as adulterated or
sold contrary to the provisions of the Adulteration Acts.

In the third quarter only 51 samples were procured by the Food and
Drugs Inspector, and unfortunately he was prevented following his duty
owing to illness, and in the fourth quarter for the same reason he was unable to
take any. Consequently his work was undertaken by the several district
inspectors in rotation.
