Food Preparations for Export.
During the year 27 certificates were granted to manufacturers
of food products in this Borough in respect of potted meats, fish
pastes, etc., intended for shipment overseas. In every case the
process of preparation was supervised by the Food Inspector of
this Council before the certificates were issued, particular attention
being directed to the quality and description of the products
to be exported. It is worthy of record that considerable care
appears to be exercised by the manufacturers concerned in the
preparation and handling of these products and to the maintenance
of a satisfactory standard of cleanliness generally throughout
the factories.
Fish Curers.
There are at present 49 premises in the Borough used for the
purpose of fish curing; of this number 44 are retail fishmongers
who cure fish for sale on the premises. The remaining 5 cure for
the wholesale market at Billingsgate. Large quantities of fish are
handled and prepared in a very satisfactory manner. During the
year 209 visits were paid to these premises while curing was in
progress. All the premises complied with the requirements of
the L.C.C. By-laws. It was only necessary in 3 instances to
serve cleansing notices.
Fish Shops and Stalls.
At the end of the year there were 65 fishmongers' shops
(excluding fried fish shops) and 10 fish stalls in the Borough. The
majority of the fishmongers are also engaged in the business of fish
curing, to which reference is made above. The premises were
systematically visited and special attention v. as directed to fish
