The conclusions from such an analysis may
depend somewhat upon the judgment of the Analyst,
but the accuracy cannot be impugned. In this case
the Defendant admitted that he had watered the
milk.
A very curious illustration of a very doubtful
case is furnished by No. 213, in which instance we
see what top skimming can do. The case seemed
to me to prove, not only that the Vendors knew that
the milk was taken for analysis, but also one of two
things : either that the Vendor did it in contempt of
the Authorities, or, knowing it was adulterated, as
the only mode of escaping detection. Believing the
latter to be true, I urged upon the Inspector the
