During the year 1891, a total of 103 samples of food have been
analyzed. These consisted of milk, 62 samples; butter, 23; pepper, 9;
mustard, 8; and lard, 1. Of these 11 samples of milk and 4 samples
of butter were adulterated; the other samples being entirely genuine.
"We find, therefore, that 17 per cent. of the samples of butter, and 17
per cent. of the samples of milk, are in this Parish adulterated.
Considering all the samples taken for analysis, the proportion of
adulterated samples is only 14½ per cent. This compares very favourably
with last year, when 31 per cent. of the articles proved to be
adulterated. This is only a little above the average for the whole of
London, which is about 12 per cent.
A total of £55 10s. for fines has been paid into the Vestry's account
so far.
My report has been delayed in order to give the result of some
prosecutions only just concluded. If samples could be brought earlier
in the quarter, it would enable me to make up my report nearer the
end of the quarter.
Appending a list of the articles analyzed this quarter,
I remain your obedient servant,
ALF. W. STOKES, F.C.S., F.I.C.,
Public Analyst.
