Analgtical Laboratory,
Vestry Hall, Paddington Green, W.,
January 20th, 1892.
To the Vestry of the Parish of St. Matthew, Bethnal Green.
Gentlemen,
During the quarter ending December 25th, 1891, T received
from your Inspectors 47 samples of food for analysis. These consisted
of butter, 21 samples; milk, 12; pepper, 7; mustard, 6; and lard, 1.
Of these, 4 samples of butter and 1 of milk proved to be adulterated.
The milk samplo being but slightly diluted, no proceedings were
taken beyond cautioning the vendor. It is very satisfactory to find so
few samples of milk adulterated this quarter. Milk has been very
plentiful and of low price; hence there has been less temptation to
tampor with it.
Two cases of milk adulteration that were not decided last quarter
have been satisfactorily concluded this quarter. The vendor of sample
No. 1/6, containing 12 per cent. of added water, was fined £6; and the
vendor of sample, No. 1/8, containing 13 per cent. of added water, was
fined £8.
Butter proves to be the most adulterated article this quarter; no loss
than one-fifth of the samples containing beef fat to the extent of from
50 to 75 per cent.
The vendor of one of these samples left the Parish directly afterwards,
so that no summons could be served upon him. In the other
cases fines, ranging from £3 to £4, were imposed. One prosecution
case, fur selling butter containing 75 per cent. of beef fat, remains
still undecided.
Thinking a short notice of the Analytical work of the year may be
of interest, I append the following facts:-
