At the request of the Ministry of Food the bacteriological
examination of heat-treated milk was undertaken, and added about
one-third to the number of samples of milk sold under special designations
already taken and examined annually. Provisional licences
had been granted by the Ministry of Food to three dairies in the
Borough for the production of heat-treated milk, a new type of plant
being used in this process.
Four hundred and sixty-two samples were taken of milk sold
under special designations and 15 of these were found not to conform
to the requirements of the Regulations. The vendors of these
samples were warned and advice given to enable the cause of the
adverse reports to be rectified. The practice of submitting all
samples of pasteurised milk to the phosphatase test was again
followed and 9 samples were reported positive by this test. These
samples were examined for tubercle bacilli with negative results.
Unsound Food.—There was a decrease in the quantity of meat
and offal inspected during the year owing to the closing of the
Ministry of Food Depot in Shore Road, consequent upon the centralisation
of meat distribution at Smithfield Market. This
alteration called for more frequent examinations of meat at
butchers' shops and the return of condemned meat to the source of
distribution in all cases.

The total weights of food condemned or

surrendered during the year were:–
