Screening of Meat Exposed for Sale.—The occupiers of shops
having open fronts have been asked to protect meat exposed
beyond the shop fronts by providing side and top blinds or sheets,
and to take such other precautions as may be required from time
to time. (This is in accordance with the Public Health (Meat)
Regulations Order and Circular.)
Market Stalls.—The butchers' stalls have all been provided
with top, side and back screens, but constant supervision is
required as the Regulations are regarded by most of the stallholders
as irksome and a restraint to their trade.
There are now on the Register in the Borough—136 butchers'
shops, including 28 Kosher butchers, 81 having glass fronts and
55 open fronts. 64 butchers' stalls, mostly in market streets.
43 butchers' stores used by stall-holders for the storage of meat
and their stalls. 27 provision shops where meat is sold from
open fronts. 93 food rooms in connection with the above premises
where meat is prepared and cooked.
Persons Employed.—There are approximately 600 men and
100 women employed at the shops in the sale and preparation of
food, and approximately 130 persons employed at the meat stalls.
