TALLOW.
A consignment of ten cases of tallow was found to have one leading mark,
three descriptions and two grades :
Casks 1-5 contained inedible tallow.
„ 6 edible. These were edible on
,, 7-10 first grade. appearance.
It has been noticed in other cases that tallow varies in the same mark and
varies in the same cask; even where a sample is drawn and the contents of the
cask passed as sound, a great deal has to be taken on trust. The centre of a cask
of tallow may be very rancid though externally sound.
I had to bring to the notice of your Worshipful Committee two instances of
recent food seizure illustrative of more or less subtle points in the feeding of the
nation.
198 cases (each containing 10 by 11-lb. tins), weight 194 cwts. 1 qr. 24 lbs..
of orange pulp from Spain. The 1980 11-lb. tins of this consignment show—
(a) Externally:—
(1) That many tins have been punctured and re-sealed.
(2) That the lids of most of the tins have been cut out and re-
soldered on by their margins.
(3) That the lateral weld has been re-soldered.
(4) That most of the tins have been brushed, and are smeared
with oil.
(b) Internally:—
(5) That the tin had been dissolved from the casing by physico-
chemical action.
(6) That the contents in contact with the casing are discoloured
by tin compounds
