about 18,494 carcases of mutton, and of these nearly 15,000 were put into Dock Store
for special examination and cutting, while 3,447 were seized on the vessel and delivered
overside into lighters for destruction.
In addition 190 quarters of beef which were seized at the ship's side and delivered
to vans for destruction, a large number were sent to the Dock Store for further
examination and trimming. This was carried out under the supervision of your
Inspectors and occupied them for a fortnight.
The examination and cutting of the mutton by a gang of butchers under a
foreman, and supervised by an Inspector, occupied three weeks.
As a result of the examination, the following meat was found to be unfit for
human food and destroyed :—
Mutton—383 carcases.
684 pieces.
40 bags, shoulders and loins.
Beef—189 fore-quarters.
26 hind-quarters.
241 pieces.
83 bags trimmings.
4 cases and 4 bags boneless chucks.
Offal—99 cases sheep-hearts.
2 bags ox-tails.
1 bag and 14 cases ox-hearts.
1 bag and 20 cases ox-cheeks.
6 bags ox-skirts.
2 cases thick skirts.
The total weight of meat destroyed was 142 tons 1 cwt. 1 qr. 27 lbs.

ACTINOMYCOSIS IN OX-TONGUES IMPORTED FROM ARGENTINA.
With reference to the above subject, referred to in my last Annual Report, the
examination of ox-tongues which arrived in the Port of London during the year under
review, was continued with a view to detecting the presence of the disease.
