Ice Cream Samples

The percentage of unsatisfactory samples is a matter for great concern. Grade 4 samples originated
in the main from sales vehicles. Considerable difficulty is experienced in this class of trading. The main
cause of the unsatisfactory gradings of ice cream obtained from vehicles and premises was unsatisfactory
cleansing of equipment. As far as premises are concerned, the main fault lay with the staff neglecting
to follow the recommended routine for serving up ice cream and for sterilising equipment. Two large
catering premises were particularly troublesome in this respect.
Three samples of water from storage tanks on ice cream sales vehicles were examined bacteriologically,
together with rinse water from an ice-cream scoop. The rinse and a sample of water was
found to be unsatisfactory. Advice was given to the vehicle operator and this led to the more extensive
use of a chemical sterilising agent.
