BACTERIOLOGICAL AND CHEMICAL EXAMINATION
OF FOOD
Bacteriological Examinations.
The Counties Public Health Laboratories, 66, Victoria Street,
London, S.W. 1., undertake bacteriological examinations for the
Council, through the Essex County Council Bacteriological Laboratory
Service.
During the year 69 samples were forwarded to the Laboratories
for bacteriological examination, 66 being samples of ice
cream and 3 samples of Swimming Pool water.
Ice Cream. The bacteriological results of ice cream samples
are summarised below, and it will be noted that the presence of
bacteria coli was detected in five samples. The classification of
the samples in relation to the Ministry's Provisional Grading is
as follows:—
Grade I. Grade II. Grade III. Grade IV.

A larger number of samples of ice cream was taken during
the year, namely 66 as against 35 in the previous year, and, whilst
it is difficult to judge in some cases between the Bacteriologist's
findings and the Ministry Grades, it may be stated that the bacterial
quality of ice cream sold in the district throughout the year tended
to show an improvement. Samples adversely reported upon gave
rise to further investigation by the Department and the results
of all samples were notified to dealers and manufacturers. Where
the source of manufacture was outside the area of the Borough,
copies of the Bacteriologist's reports were forwarded to the
authorities concerned.
The registration of persons as manufacturers or vendors of
or merchants or dealers in ice cream or other similar commodity
is granted by the Council under Section 158 of the Essex County
Council Act, 1933, and the number of persons so registered at
the end of the year was sixty.

The registration of premises used in connection with the
manufacture or sale of ice cream is dealt with under Section 14
of the Food and Drugs Act, 1938, and the number of premises so
registered was sixty-one.
