INSPECTION AND SUPERVISION OF FOOD.
The following is contributed by the Chief Sanitary' Inspector;-
(a) Milk Supply.
Routine phosphatase tests were carried, out on samples of
pasteurised milk, more particularly to control the efficiency of
the two plants licensed in the Borough.
The average number of cows kept in the district is eight.
There is only one a cowshed and 6 visits were paid by the Sanitary
Inspectors, in addition to special visits paid by your Chief
Sanitary Inspector.
The number of retail purveyors of milk is 109, most of whom
carry on a general shop and sell milk in battles as they receive
it. Visits were paid to maintain the general standard of
cleanliness.
During the year 19 samples of milk were taken for bactericlogica1
examination. Two gave unsatisfactory results.

THE MILE AND DAIRIES ORDER, 1926.
Attention was again directed to this Order with a view to
minimising the risk of contamination, infection and adulteration
-of milk.
THE MILK (SPECIAL DESIGNATIONS) ORDER, 1936.
The number of licences granted for the Sale of Milk under
Special Designations classified in the above Order was as follows:-
Dealers's Licences.
In respect of:-
Pasteurised Milk 30
Tuberculin Tested Milk 16
Supplementary Licences .
Pasteurised Milk 3
Tuberculin Tested Milk 3
Bottling Licences.
In respect of Tuberculin Tested Milk, 2; Pasteurised Milk, 2.
Council
Under the requirements of the Essex County Act, 1933, all
Ice Cream Vendors or Manufacturers in the Town must be registered.
During the year registration was granted in two cases, and a
total of 127 Vendors were trading. Most sold a proprietary
article and those manufacturing the commodity were kept under
special supervision.
(b) Meat and Other Food.
No slaughtering has been carried out during the year under
review. As mentioned in the Report for the year 1940,
slaughtering in this Borough ceased owing to the operation
of the Live Stock (Restriction of Slaughter ins-) Order 1940.
