The character of the food was generally good, but 15 consignments
of unsound food were condemned—including fish,
meat and fruit—and certificates given indicating the condition of
the food when examined.
In cases of wet fish condemned on the day of purchase, the
Billingsgate Market Authorities were at once communicated with
and information given respecting its condition; in some instances
an Inspector from the market came to examine the fish, in every
case confirming our action.
Six churns of unsound milk were seized and condemned as
unfit for human food. Legal proceedings were instituted but the
summons could not be served as the defendant decamped.
Bakehouses.
There are 49 bakehouses in the Borough, I being underground.
The others are of modern structure and well-maintained.
During the year 81 inspections were made and limewashing
and cleansing carried out in accordance with the Regulations.
Sale of Food and Drugs Act.
During the year 315 samples of milk were procured and submitted
to the Public Analyst, who reported that seven of them
were adulterated with added water or were deficient in fat
(equalling 2.2 per cent.). In no instance, however, was there any
report of excess of sediment in milk.
Altogether 463 samples of food and drugs were taken, 7 of
which were adulterated, equivalent to 1.5 per cent.
Legal proceedings were instituted on 5 occasions, for results
see p. 141.
