The yearly averages, including adulterated samples are given in the
following table :—

Hospitals, etc., Samples.—24 samples of milk were taken on delivery for
chemical examination from various institutions in the Borough. The average
composition of the milk was:—Fat, 3.47 per cent., and solids-not-fat 8.72 per
cent.
School Samples.—49 samples of milk were taken on delivery at schools in
the Borough. The average composition of the samples was Fat 3.46 per
cent., and solids-not-fat 8.72 per cent.
Bread and Butter.—185 samples consisting of either bread and butter or
rolls and butter were examined. Of these, 6 samples of bread and butter
and 35 samples of rolls and butter were adulterated.
The adulterated samples comprised:—
Informal Samples—
Bread and Butter.—B 174, B 359, B 466, B 660 and B 739. In these five
samples the fat consisted entirely of margarine fat.
Rolls and Butter.—B 55, B 74, B 102, B 176, B 192, B 193, B 293, C 399
B 414, B 490, B 656, B 657, B 699, B 805, C 834 and B 820. In
these 16 samples the fat consisted entirely of margarine fat, also—
B 123. The fat contained at least 30 per cent, of margarine fat.
C 401. The fat contained at least 80 per cent, of margarine fat.
B 463. The fat contained at least 50 per cent, of margarine fat.
Formal Samples.
B 92. Rolls and butter. The fat contained at least 60 per cent, of
margarine fat. Vendor fined £1 with £2 2s. Od. costs.
B 93. Rolls and butter. The fat consisted entirely of margarine fat.
Vendor fined £5 with £2 2s. Od. costs.
B 144. Rolls and butter. The fat contained at least 10 per cent, of
margarine fat. Vendor fined £2 with £l 1s. Od. costs.
B 191. Rolls and butter. The fat consisted entirely of margarine fat.

B 328. Rolls and butter. The fat consisted entirely of margarine fat.
