Of the three samples of dried mint taken, one was found to contain 30
per cent of leaf other than mint leaf. Legal proceedings were instituted but
a warranty was produced and the case was withdrawn on payment of £3 3s. 0d.
costs.
An informal sample of mint sauce was found to contain 30 per cent of
leaf other than mint leaf. A formal sample was obtained from the same
source and was certified to contain only 5.8 per cent of foreign leaf. No
action was taken.
An informal sample of tinned cream which bore a label describing the
contents as containing 23 per cent of butter fat was found to be 43 per cent
deficient in the amount declared. A formal sample was taken and was certified
to be 73 deficient in butter fat. Legal proceedings were taken, and on a
warranty being proved, the case was dismissed on payment of £2 2s. Od. costs.
Of the samples of milk 11 or 24 per cent were found to be below the
standard fixed by the Board of Agriculture.

In the subjoined table are shown the number of samples of milk taken during the four quarters of the year, with the numbers and percentage of those not found to be genuine:—

In six of these samples, water was certified to have been added. In each
of these cases the amount of added water was less than 5 per cent. Five
of the samples showed deficiency in fat ranging from 1 to 8 per cent below
the standard as laid down by the Board of Agriculture.
Legal proceedings were instituted in 2, or 18.18 per cent, of the cases in
which samples of milk were below standard.
No legal proceedings were considered advisable regarding the remainder
of the samples of milk below standard. The percentage of the adulterated
samples of milk in which the departure from normal was so small that it was
not thought advisable to institute legal proceedings was 81.81.
