The fact that samples of ice cream with low fat and solids
contents have satisfied the methylene blue Group I and II tests,
and those with higher fat and solids contents have been placed
in Groups III and IV, together with the very wide range of fat
and solids contents found generally, indicates the necessity for
a legal standard being set up as soon as possible.
Ice cream of good food value is manufactured by some firms,
but it is obvious that, in the absence of a legal fat standard,
other firms are making ice cream without regard to its adequate
food value.
Legislation is awaited whereby ice cream of a good food and
bacteriological standard becomes a legal obligation on all manufacturers.
It is felt that, in general, it is the wish of the ice cream trade
to produce a satisfactory article, but there are difficulties at the
present time in the obtaining of all the necessary appliances and
ingredients for this purpose.
It is also a matter of concern that the itinerant vendors of
ice cream, who come from outside the district and sell only
during week-ends and holidays, are not required to be registered
with this Local Authority, and the Health Department are not
aware of their presence and activities until they are observed.
It is not always practicable to patrol the whole area for this
purpose.
SPECIAL ENQUIRIES.

Following investigations into various complaints of suspected foodstuffs and into cases of gastro-enteritis, samples of the following foods were submitted for bacteriological examination with the results shown:—
