Special Samples of Milk, Ice Cream, and Water.
In addition to the samples previously mentioned, a further 151
samples were taken for bacteriological and pathological examination
and other special tests, as under: —

Ice Cream.
At the end of the year, one hundred and ninety-five premises were
registered for the storage of, and sale of ice cream, but none for the
manufacture of this commodity. One hundred and two inspections
were made and conditions were found to be satisfactory.
Forty-one samples were sent for bacteriological and pathological
examination.

The following is an analysis of the results obtained during the past three years: —
