Pre-packed ice cream was of good quality and bateriological cleanliness. Continuous
attention is necessary to ensure that ice cream dispensed from cans or from extrusion
units is not exposed to risk of contamination.
Liquid Egg
Twenty-one samples of liquid egg were taken from bakeries to check that the egg
had been properly pasteurised. Three of the samples did not satisfy the alpha-amylase test
but investigations failed to reveal any reason for this and subsequent samples of the same
brands proved satisfactory.
Milk - Registration, Licensing and Sampling
One hundred and eighty-one premises are registered for the sale of milk and the
following licences for the sale of graded milk have been issued:-
Untreated Milk 39
Pasteurised Milk 175
Sterilized Milk 108
Ultra-heat treated Milk 136
One hundred and eleven samples of raw milk were submitted to the laboratory for the
milk ring test, a screening test to determine whether brucella organisms might be present
in the milk. Eight positive results were reported in respect of one herd. All the milk sold
from this farm for human consumption was already being heat treated but the danger of
consuming raw milk was pointed out to the farmer and his employees who received free untreated
milk. Subsequently, following the high rate of aborted calves, the farmer decided to
cease milk production and to concentrate in the future on beef cattle.
Thirty-seven samples of untreated milk examined bacteriologically were found to be
satisfactory, whilst a further twenty-seven submitted for biological examination for the
presence of tubercle bacilli were all found to be free of the organism.
