Condensed Milk.
Twenty condensed milks were specially examined for compliance
or otherwise with the requirements of the new
Regulations.
They were all found to fulfil these requirements, both in
respect of the amount of fat and non-fatty solids present and
in regard to the composition of the milk yielded on dilution.
Butter, Margarine and Lard.
Forty-one samples of butter were analysed and of these one
was found to contain 118 per cent, of water, i.e., 2 per cent,
in excess of the permitted maximum.
Eleven margarines and eight lards were also examined and
were reported genuine. In the butters and margarine where
boron preservative was found the limit was not exceeded.
Cocoa and Coffee.
Sixteen specimens of cocoa and ten of coffee were passed as
genuine. Tests for arsenical contamination in the cocoas gave
negative results.
The following meat and fish preparations were examined during the year:—
| Brawn | 2 samples. |
| Crayfish | 1 sample. |
| Meat and fish paste | 11 samples. |
| Meat pie | 6 „ |
| Prawns | 1 sample |
| Sausages | 31 samples. |
With the exception of four samples of sausages these proved
to be free from preservatives. In one case the sausages were
sold with notice as to the presence of preservative and hence
were passed as genuine. The preservative found here was
sulphur dioxide—176 parts per million—an amount well
below the limit of 450 parts per million. In another a small
proportion of boric acid was found—0'7 grain per pound—
and in the remaining two sulphur dioxide occurred to the
extent of 89 parts per million and 315 parts per million
respectively, and in both these instances no notice was given
in regard to preservative at the time of purchase.
Conserves, Vegetables, Fruits, &c.
Two specimens of jam, two of marmalade, three of peas,
one of fruit salad, one of tomatoes, one of lemon cheese and
