It is interesting to note that Britain and Ireland increased the food supplied by
600 tons weekly, viz. :— | |

At present consignments of dressed beef are coming direct from Ireland into
Smithfield Market, chiefly from Drogheda. Some very excellent beef has been delivered,
which entered into keen competition with Scotch beef. Not only was the quality good,
but the dressing and cleanliness of the meat reflected credit on those responsible, as did
also the freedom from disease.
Considerable activity was observed during the year in the supply of fresh pork from
Ireland. Consignees in Smithfield Market have with commendable enterprise been at
considerable trouble to educate Irish consignors as to the right type of pig carcase required,
the best method of dressing, packing and transport. The consignors have also taken a great
interest in this work, as have also the officials of the Ministry of Agriculture for the Irish Free
State, who have repeatedly visited the Central Markets making observations and also obtaining
from the salesmen and meat inspectors useful information. The Department of Local
Government and Public Health Secretary has taken great interest in the meat inspection
branch of the supplies, and the Department appears anxious to ensure that no doubtful
meat is exported from Ireland. Enquiries have been received from Veterinary Inspectors
in charge of meat inspection in Ireland as to the standard adopted here in judging as to the
fitness for human food of carcases. All this activitv noints to Droeress in the rierht direction.
