Under your instructions I have also procured 25 samples of milk for
bacteriological examination, which were submitted to the analyst; for particulars
see his report.
Licensed Slaughter-houses.
I have made 169 inspections of the slaughter-houses in my district, and
have found the regulations strictly carried out, and the animals I have seen
killed and the carcases examined after slaughter have all been of prime
quality and free from any sign of disease.
Cowhouses.
74 Inspections of the cowhouses have been made; the bye-laws have been
well observed, the cows in a healthy and cleanly state, and the premises in
a sanitary condition.
Food Manufacture.
In my district there are ten places where sausages and poloneys, &c., are
made on rather a large scale. I inspect these places at irregular times and
frequent periods. I have never found any tainted or diseased meat or other
material used in the manufacture of those articles of food. All has been
wholesome and fit for the food of man.
