The average composition of the 792 samples of milk returned as genuine throughout the year was as under :—

Of the creams purchased as fresh, 9 were found to contain
Crystallised Boric Acid in amounts varying from 5-6 grains per
pound (0-08 per cent.) to 42 grains per pound (o-6o per cent.).
Of the creams sold as " preserved," one sample was found to
contain 51.8 grains of Crystallised Boric Acid per pound (0.74 per
cent.), an excess of 16.8 grains (0.24 per cent.) over the amount
declared on the label at the time of purchase, namely, 35 grains
per pound (0.5 per cent.). In one other instance also the amount
of boron preservative exceeded o-5 per cent., whilst in all other
cases the quantity of Crystallised Boric Acid fell below this amount.
BUTTER.
635 samples of Butter were submitted during the year, 29
being taken with the necessary formalities
