Milks Purchased on Sundays.—Of the 160 samples of milk purchased on
Sundays, 146 were found to be genuine, and 14, or 8.7 per cent. were
adulterated. This figure compares with 6.9 per cent. in 1911, 8.7 in 1910, 8.8
in 1909, and 7.4 in 1908.
Milks Purchased on Week-days.—326 samples were purchased or procured
on week-days, of which 310 were returned as genuine; that is to say,
they passed the standard of the Board of Agriculture; and 16, or 4.9 per cent.,
were declared to be adulterated. This is the lowest figure hitherto recorded
in Islington, and it is so far satisfactory; but as pointed out in previous paragraphs
it by no means represents the amount of adulteration that is occurring
here. The fact is that it is not possible to detect the addition of separated
milk, and until its mixture with pure milk is absolutely prohibited, and stringent
provisions made as to its sale, so long will this form of adulteration continue.
Milks Procured at Railway Stations in course of Transit.—120 samples
were procured at the railway stations, and of these only 3, or 2.5 per cent.,
were returned by the Public Analyst as adulterated. This return is somewhat
below that of the preceding year, when the percentage was 4.1.
Quality of Milk.—During the last 15 years, although 1,780 samples of
milk, arriving from farmers were examined, only 33 were found to be adulterated,
and not only that, but in the same years the average percentage of their fat was
