Wherever brawn or sausages are made and where ice safes are
in use, the premises are now and again, thoroughly examined.
Boned beef and bull beef is used in some of the sausage making
shops, and the former is very carefully examined for any signs of
disease, as in this state the meat requires examining in section.
Several lots of meat, fish and fruit have been surrendered during
the year. On one occasion I seized a pig's head, one of the glands
of which was tuberculous, but as the butcher did not know the
disease, having never seen it in his experience, and had not bought
the carcase, I allowed him to surrender the head, and a strong
letter of caution was, by your directions, sent to him. It was also
pointed out that this disease in any part of a pig is sufficient to
condemn the whole carcase. On two other occasions I had
surrendered on inspection, and had destroyed some large pieces of
beef which were unfit for human food. The vendors were also
cautioned.
