FOOD SUPERVISION.
The Inspector visited the slaughterhouses on 582 (589) occasions when killing was in
progress, and examined 5,363 (5,716) carcases in process of dressing, viz.—152 (149) of
bullocks, 5,206 (5,534) of sheep, and 5 (33) of calves. Those numbers are slightly below
those for 1907, given in parentheses.
The following organs (total weight, 1,800 [670] lbs.) were destroyed during the year, for
the reasons assigned in each case :—
Sheep. Livers, 41—parasites 30, cirrhosis 5, and abscesses 6.
Lungs, 4— „ 2, pneumonia and pleurisy, 1 each.
F orequarter—pleurisy.
Bullocks. Livers, 39—parasites 28, abscesses 7, cirrhosis 3, tuberculosis 1.
Lungs, 6— ,, 3, pneumonia 2.
Carcase and organs—tuberculosis.
Food Purveyors' Premises.—The appended statement gives the numbers of the different
classes of premises under the supervision of the Department, and of the occasions on which
such premises were inspected during the year. The drains at two milk-shop and ice-cream
premises, and three restaurants were reconstructed during the year.

Miscellaneous.—In addition to the above, there are 3 premises where fish curing is carried
on, and 9 where the manufacture of sausages takes place. Such premises are systematically
inspected as to their construction, and maintenance in a proper state and as to the food
materials dealt with thereat.
Milk Supply.
Cowsheds.—The only one in the Borough is situate at—
Star Street, No. 39, is licensed for 10 cows, but not more than 5 are kept.
The shed is always in excellent condition. The Inspector reports that he visited the premises
3 times during the past year. The Officers of the County Council make frequent inspections
of the premises and the animals kept there.
Dairies and Milkshops.—At the end of 1907, 175 names were on the Register. During the
past year 12 names were added, 11 removed, and 29 changed, leaving 176 effective entries at
