During the year, 2,494 inspections of such food premises and market streets
were made and 25 notices served for sanitary defects found.
Inspection of Restaurant Kitchens.
The large day population in the Borough calls for many eating houses ranging
from the "cook shop" where cheap. meals are provided to the high-class
restaurant. The inspection of the kitchens of such places has become a routine
but important part of the work of the Public Health Department. Generally
the kitchens are found to be satisfactory and the food clean and wholesome.
Occasionally, however, some action is necessary to ensure compliance with a
reasonable standard of efficiency. For instance, in the year 1931 the attention of
the proprietors of two small restaurants was called to the lack of suitable
accommodation for the storage of meat and similar perishable goods. The
suggestions made by the Public Health Department for dealing with the defects
were adopted and satisfactory improvements effected. In all 24 notices were
served during the year respecting unsatisfactory conditions at hotels, restaurants
and eatine houses.
