there are a considerable number of wholesale butchers and offal

and rabbit shops, all of which are regularly inspected by the
meat inspector.
Several of these wholesale butcher shops deal in old cow.
bull and sow carcasses, which are used in the manufacturing trade
for sausages, pies etc. Several new premises have been opened
during the course of the year, and due to the nature of this
business a rigid inspection is maintained to ensure that diseased
carcasses are not passed on to the public.

mutton and lamb was made for Caseous Lymphadenitis in the Public
Cold Air Stores.
Consignments of Continental and Scandinavian offals and
tinned hams continue to be imported into the Borough and these
are regularly inspected for disease and unsoundness. The collect
ion of unsound meat and other foodstuffs continued to be collected
very satisfactorily by Messrs Henson and Burbidge Ltd., Matusa
