Milk.
Domestic consumers in the borough are now supplied solely
with milk bottled by the large combines, no milk now being bottled
in Finsbury.
The increase in the number of dairies from 12 to 13 is due to the
construction in Sebastian Street of a distributing depot by a subsidiary
of one of the large wholesale concerns. Here some 2,500
gallons of milk per day are handled, 700 gallons being bulk milk in
12 gallon churns which is split up into smaller cans for delivery to
restaurants and canteens. In common with the other large depot in
Goswell Road, and the ten small dairies, this milk has been regularly
sampled in the early morning, for both chemical and bacteriological
examination. It may be remembered that in 1951, all the unsatisfactory
milk samples were from this bulk milk, and were considered
to be due to carelessness. There were no unsatisfactory
reports during 1952, and it might reasonably be claimed to be due to
the fact that knowledge that the milk might be sampled at any time,
led to greater care on the part of persons handling this milk.
