PUBLIC HEALTH (DRIED MILK)
REGULATIONS, 1923.
No samples of dried milk were taken during the
year.
BACTERIOLOGICAL EXAMINATIONS OF
FOOD.
During the year, 34 bacteriological examinations,
including 17 of milk, were made as follows :—
Pasteurised Milk, 13 ;
Tuberculin Tested Milk, 2 ;
Ordinary Milk, 2 ;
Tinned Herrings, 1 ;
Tinned Sardines, 1 ;
Tinned Salmon, 1 ;
Salmon and Shrimp Paste, 1 ;
Ice Cream, 1 ;
Ice Mix, 1 ;
Filth, 6 ;
Miniature Cigarettes, 1 ;
Victoria Park Lido Water, 1 ;
Public Baths Water, 1 ;
Rat, 1 ;
Swimming Bath Water, 1 ;
B. Coli was found in 1 sample of " Tuberculin
Tested " Milk and in 2 samples of ordinary milk.
THE FAT CONTENT IN MILK.
For the past two years I have reported the results
of investigations made in this department into the
percentage of fat found in Bethnal Green milk samples,
especially from the point of view of its low level
compared with agricultural experience and its falling
off as compared with earlier years. There was
no great change in 1937 compared with 1935 and
1936, and the figures are still very unsatisfactory,
calling for some explanation by the milk trade.
From the evidence furnished in my last report, it
is clear that milk consumers are entitled to expect
an average fat percentage of 3.6 or 3.7. Bethnal
