49 samples proved to be 14.5 per cent., and the statutory limit of
16 per cent, was not exceeded in any case.
Margarine.
The 43 samples of Margarine examined during the year were
all procured informally. They proved to be genuine and their
average water-content amounted to 14.1 per cent. No sample
contained moisture in excess of 16 per cent.

Fifteen informal samples of rice were procured and submitted
to the Public Analyst and all were reported as genuine.

Dried Fruits.
During the year 28 samples of dried fruits (2 formal and 26

Of these, 1 formal and 1 informal sample of raisins were found to
contain preservative in excess of the amount permitted by the
Public Health (Preservatives, &c., in Food) Regulations. Proceedings
were ordered by the Committee against the vendor of the
formal sample but were subsequently withdrawn on legal advice,
by order of the Health Committee.
Sausages and Minced Meat.
Eleven samples of sausages (10 of which were procured informally)
were examined by the Public Analyst, and two samples (one
formal, one informal) were found to contain a sulphite preservative,
and should therefore have been described as "preserved." The
vendor of the formal sample was, by direction of the Health Committee,
cautioned.
Samples of sausage labelled "preserved" were also procured
informally and submitted to the Public Analyst.
Four samples of minced meats were certified on analysis to be
genuine.
