4. The percentages given by the data in Table I. are as follows
Genuine Composition 98.51 per cent.
Adulterated 1.24 per cent.
Inferior 0.25 per cent.

MILK. 5. The particulars relating to the sample or Milk reported as adulterated are given in Table II. TABLE II.

6. The remaining 133 samples submitted were found to have the
normal composition of unadulterated milks, or of milks which must
be regarded as unadulterated, and to be in accordance with the requirements
of the " Sale of Milk Regulations, 1901," 25 being of " Good "
quality, 97 of " Fair " quality and 11 of " Poor " quality.
7. The application of the terms " Good," " Fair," and " Poor " to
samples of Milk is based on the following analytical data :—
Non-fatty solids 8.5 per cent, or over:—
With from 3.0 to 3.35 per cent, of fat, Poor Quality.
„ 3.35 to 3.8 ,, „ Fair Quality.
,, 3.8 and over ,, ,, Good Quality.
MARGARINE.
8. The sample which was certified as Inferior contained 15.46 percent,
of water.
This amount was below the limit of 16 per cent, laid down by the
Food and Drugs (Adulteration) Act, 1928, but in view of the high percentage
of water the sample was reported as inferior.
COFFEE AND CHICORY MIXTURE.
9. These samples were found to contain the following percentages
of Chicory:—
44, 38 (2), 37 (2), 35 (5).
and therefore the composition of these mixtures had been correctly
described.
