The percentage of adulterated samples, l.6 per cent., is the
lowest recorded in the last five years, and compares with 7'3,
7.9, 9.4, 7.2, and 3.2, in the preceding years. None of the
imformal samples were found to be adulterated. The number of
samples taken on a Sunday was 20, and 1 of these was found
adulterated.
In the certificate furnished by the Analyst, a fat percentage
figure is given in the case of each sample of Milk. The minimum
legal standard is 3 per cent. The 214 samples analysed
show the following fat percentage figures:—
