* Since 1904 a new system has been adopted, a special inspector being
appointed to carry out the duties under the Sale of Food and Drugs
Acts, instead of, as formerly, several of the district inspectors doing
this work.
A glance at the above table shows that the improvement
effected by the vigorous enforcement of the Acts in their District
by the Council has been well maintained during the year. These
results are even more satisfactory if it is recognised that they are
coincident with the increase in the number of samples taken during
the past six years.
Milk.
Of the total number of samples purchased under the provisions
of these Acts during 1912 629 (i.e., 62.9 per cent.) were milk
samples. Of this number 53 (i.e., 8.4 per cent.) were reported
by the Public Analyst to be adulterated. During 1911 635 of
the samples purchased referred to milk of which 68 (i.e., 10.7 per
cent.) were found to be adulterated.
The nature of the adulteration in the adulterated samples of
milk was as follows :—
1. Extraneous water (30) varying from a minimum of 1 per
cent. to a maximum of 19 per cent., viz.: 1, 1, 1, 2, 2, 2, 2.5,
3, 3, 3, 4.7, 4.8, 5.4, 6.3, 7.4, 8.3, 8.7, 9, 9.6, 9.6, 9.6, 10, 10, 10,
10.5, 11, 12.8, 13.6, 18, 19.
2. Deficiency in milk fat (14) varying from a minimum of 3
per cent. to a maximum of 25.3 per cent., viz.: 3, 4, 7, 8, 10,
10, 10, 10, 15.3, 17.3, 18, 19, 20, 25.3.
