C.—PROTECTION OF THE FOOD
SUPPLY.
During the year the meat and food supplies of the Borough have
been supervised as in the past. Inspector Billing, the Council's
special meat inspector, has continued his work in connection with
the extra-Corporation meat market, and the meat shops generally in
the Borough. Each District Inspector, also, in his own district,
has been held responsible for inspections of these latter places and
the articles sold in them. The Saturday night and Sunday morning
inspections of the market streets have been continued by the Inspectors
in turn.
The quantity of meat, etc., dealt with during the year was again
very large. The articles, quantities, etc., "surrendered" voluntarily
by the dealers to the Inspectors are shewn in the summary on
page 82. About 90 per cent. of the total meat surrendered was
foreign (chiefly Argentine and Dutch):—
