The method af sampling adopted is as follows:
(a) 500 ordinary samples, including milk;
(b) 100 extra samples of milk only.
As will be seen by the above table, the 500 ordinary samples
include milk, butter, cheese, coffee, mustard, popper, etc. These
samples are taken by each Inspector in his own district monthly.
Every salesman of these or similar articles is sampled at some time
during the year.
The extra milk samples have been taken at unusual hours (in the
evening, on Sundays), or in the streets. The percentage of adulteration
in these extra samples during 1907 was 21.0, as compared with
a percentage of 6.5 in the ordinary samples.

For convenience, I append a summary of the samples taken under the Food and Drugs Acts and examined during the year 1907, and a table comparing these figures with those of the six previous years:—
