Fried Fish Premises.
55 premises are on this Register, of which 27 have the modern
fish-frying furnaces with condensing, hooded pans, 21 have installed
refrigerators and 39 have electric potato peelers.
During the year the following work has been carried out:—
Progress in the fish trade is slow owing to the big increase in the price
of the raw materials used.
Fish Curers.
33 Fish curers premises are on the Register. During the year work
has been carried out as follows:—
The above figures in regard to cleansing do not fairly represent the
case, as the nature of the business necessitates frequent lime-washing
and cleansing, and is invariably carried out by the proprietors.
In October special enquiries were made at all Fish Shops relative
to the removal of offal. The investigation proved that the amount of offal
produced has been considerably reduced in quantity. Modern methods
of fish marketing result in the fish being consigned headless and in many
cases filletted.
For many shops the amount of offal produced in two days is only
half a bucketful, and the tank method of removal from the premises
has become common in consequence. Occasionally a nuisance occurs
by improper handling, only one complaint was received during the period
under review.
Other Foods.
These include premises occupied by muffin makers, chip potato
vendors, pie vendors and a sandwich shop. Three new ones have been
added, 2 improved and 4 cleansed.
