Under this scheme all future applications for Registration will be
recommended in so far as they comply with the suggested standards. As
regards the old-established makers, improvements will be called for and
where the sample taken proves below standard of purity the Registration
of the premises will be cancelled or the requirements enforced.
There is now only one large wholesale manufacturer of Ice Cream,
and the factory is to be remodelled and extended in 1935.
PREMISES WHERE FOOD IS PREPARED.
I have received the following report from Mr. Syms.
There are a large number of these premises in the Borough and
periodical inspection is carried out as far as possible once each quarter.
The general policy is to ensure to the public, clean, wholesome food,
prepared, cooked and served under hygienic conditions. During the
year steady progress and improvement has been made and, speaking
generally, the trade is well conducted.
Eating Houses.
The following is a summary of the premises under inspection:—

Of the above, 94 have installed some form of cold storage, either
in the form of an ice safe or mechanical refrigerator, 59 have undergone
alteration and improvement, 110 have been cleansed, 12 have been
closed, and 37 new businesses established.
Fish Friers.
There are 52 premises registered for the purpose of Fish Frying.
Among these are several premises which will in the near future be
included in Clearance or Improvement Areas; for this reason modernising
or extensive improvements are not called for. There are now 17 Fish
Friers with the new type of furnace constructed to condense its own
steam, dispensing thereby with the hood. These ranges are a distinct
improvement on the old type, and every effort has been made to persuade
