Sanitary Administration.
The "Toning of Milk" is a commonly practised refinement of
adulteration, and consists in adding water or skimmed milk to milk
which is above the required standard laid down by the Board of
Agriculture, viz.: 3 per cent, of fat and 8.5 per cent, of solids not
fat. Supposing for example a sample of milk is found to contain
4 or 5 per cent, of fat, it is watered down until it becomes 3 per
cent., much to the profit of the vendor and much to the loss of the
purchaser.
