as major and 85 as minor. These have been the subject of sanitary
notice, and considerable improvement effected not only with regard
to structural defects, but, by advice and intimidation, in respect of
the towels and water used for cleansing the glasses provided for the
public, the latter probably being the chief source of contamination.
Dining-rooms.—A similar systematic inspection was made of
the kitchens, &c., attached to eating-houses. In all 70 premises were
visited, and the methods of storage of food, treatment of refuse,
cleanliness of premises, &c., enquired into. In the large majority of
cases, having regard to the nature of the business, the conditions were
fairly satisfactory, but in a small minority more or less serious defects
were found and remedied.
