PUBLIC ANALYST'S REPORT
For the Year ending Midsummer, 1894.
TO THE BOARD OF WORKS FOR THE ST. SAVIOUR'S
DISTRICT.
Gentlemen,
I have the honour to report that during the past year
I have analysed 118 samples of food and drink, all of which
were submitted to me by your Inspectors. They consisted of:—
Arrowroot 2 samples.
Brandy 6 ,,
Butter 11 ,,
Coffee 12 ,,
Gin 9 ,,
Milk 57 „
Mustard 4 ,,
Pepper 2 ,,
Whiskey 15 ,,

Arrowroot.—Both samples were genuine.
Brandy.—All six samples were genuine and above the legal
strength, being respectively 9½°, 12°, 14°, 16½°, 18¾°, and 19½°
under proof respectively.
Butter.—Eleven samples were analysed, all of which were
genuine. Thanks to the Margarine Act, adulterated butters are
not so frequently met with as was the case some few years ago,
but cases of margarine being exposed for sale unlabelled still
occur in other districts. It would be well to take samples
occasionally under the Margarine Act.
Coffee.—Out of twelve samples analysed one only contained
chicory to the extent of 50 per cent. This sample was, however,
declared to be a mixture at the time of sale, and hence no
proceedings could be taken against the vendor. The sale of
