XXXII.—ABSTRACT OF THE QUARTERLY
REPORTS OF THE PUBLIC ANALYST,
For the Year ending March 25th, 1894.
The total number of samples of food analyzed Was
361, consisting of Milk 217, Groceries 59, Butter 58,
Lard 18, Spirits 8, and Pastry 1.
Of these, 33 samples of Milk, 4 of the Groceries,
and 1 of Butter, proved to be adulterated.
Reviewing the separate articles we find as follows:—
Milk shows that 3 5 per cent. of the samples taken
have been either skimmed or watered The quantity
of water added varied from 5 to 27 per cent., with
an average of 10 per cent. The quantity of cream
abstracted ranged from 15 to 33 per cent., the average
being 25 per cent. The Milk samples have been
obtained from all portions of the Parish, on week-days
and on Sundays, some from retail dealers in the streets
and in shops, others from country farmers at the railway
stations. Much of the adulteration is due to the
farmers. Of the street samples the adulteration is
worst on Sundays.
The average adulteration in the Metropolis is about
21 per cent., so that this Parish with only 15 per cent.
is well below the average.
