I had further stated that this milk had eight per
cent of added water. The case was referred to
Somerset House. After 5 weeks, the solids not
fat had only diminished from 7.87 per cent to 7.83
per cent. ! and the result of the examination was
thus given by the referees, "From a consideration
of these results, and after making the addition for
material loss arising from the decomposition of the
milk through keeping, we are of opinion that the
milk contains not less than four per cent. of added
water."
Mr. Chance, the presiding Magistrate, allowed
me to make some observations. I pointed out that
this milk had only lost 0.04 per cent. of solids not
fat. I stated there was no regularity in the loss
