A sample of Pickled Onions was of excellent
quality.
A mixture which has made much noise in the
world, and which has proved a great success through
the publicity of the Press, is certainly incorrectly
described. Eno's Fruit Salt contains a mere trace of
potash, and is therefore not a fruit salt. It is simply
an effervescing aperient, and if the statements as to
its sale are correct, I would rather not give my opinion
of the public.
In conclusion, I may mention that, at the desire
of several of yourselves, I have examined three Ice
Creams such as are sold in the streets. No. 87 was
very good; No. 71 contained starch in considerable
quantity, much altered by boiling; and No. 84 a
gelatinous substance in place of the starch to give it
bulk. All three were made with good milk, and none
of them contained a trace of metallic contamination.
The certificates of these 60 articles are in the
hands of the Inspectors.
