adjudicated upon at Lambeth Police Court to-morrow
afternoon (June 23rd), and, as it awaits my explanation
before the magistrate, in deference to him I
refrain from publishing my argument.
One suggestion, as to Milks, I would venture to
make. On account of their corruptible character I
would advise that Summonses should be taken out at
as early a date as possible, inasmuch as the Milks
undergo a change very unfavorable to the Analyst,
and these changes are not sufficently understood.
When a Milk has been topped, as is so often the case
at the period of cheese-making, the addition of skimmilk
renders it much more liable to decomposition,
and the rapidity with which it putrifies is general
in the ratio of such admixture. No more common
feature can be mentioned than the rapidity with
which Milks become sour.
I know that it is considered very rash to attempt
to put a stop to the practice of skimming: nevertheless
I have acted upon my convictions. If in the months
of May and June, percent. and 1 percent. are to
be allowed to represent genuine Milks, what may we
not expect in the future ?
