To the Vestry of the Parish of St. Matthew, Bethnal Green.
Gentlemen,—During the Quarter ending March 25th, 1888, your
Inspectors have submitted to me for analysis 24 samples of food.
These consisted of Milk 18 samples, Pepper 3, and Mustard 3.
The samples of Pepper and of Mustard were genuine and of
good quality. Of the samples of Milk 5 were diluted with water,
none of these contained less than 20 per cent. of added water, while
the worst sample contained 30 per cent. In all these cases prosecutions
were undertaken and fines were imposed. In one of the
genuine samples of Milk a very high proportion of cream, 3 per cent.
above the average, was found; here the vendor, suspecting the
purpose of the purchaser, added some cream to make himself safe.
It is unsatisfactory to find 28 per cent. of the Milk of this Parish to
be adulterated. The sum of £15 for fines has been awarded to the
Vestry.
